Recipe : Cream of Celery Soup


Cream of Celery Soup

  

Ingredients

For 4

Potatoes

120 gm

3 kg

Celery

250 gm

6.25 kg

Stock

750 ml

18.75 litre

Onions

60 gm

1.5 kg

Parsley

5 gm

75 gm

Butter

30 gm

750 gm

Refined flour

30 gm

750 gm

Milk

300 ml

7.5 litre

Pepper

To taste

15 gm

Salt

10 gm

100 gm

 

Methods :

1.    1.  Prepare vegetables and boil in stock till tender.

2.    2.  Rub through a sieve and make a puree

3.    3. Make a white sauce with flour, butter and milk

4.    4. Add sauce to puree. Add seasoning.

5.    5. Bring to boil and serve hot, garnished with finely chopped celery hearts

Recipe of Potato Salad




Cold cooked potatoes sliced neatly make a popular salad. Sprinkle the slices well with dressing and topped with a little chopped parsley.

Chopped onions may be sprinkled over if required.

Potato in beetroot combined well but remember not to arrange them together until required or the beetroot will discolour the potato. Sliced or chopped nuts can be mixed with the dressing and added.
